About:
Hydro Honey is produced using a new hybrid process that combines elements of washed and honey fermentation. After harvest, ripe cherries are pulped and then fermented in water, allowing for precise control of microbial activity and temperature. Once fermentation is complete, the coffee is removed from the water but dried with a layer of mucilage still intact (honey process). This “hydro honey” approach enhances cleanliness and stability while preserving the sweetness associated with honey processes. In the cup, the result is a refined profile with bright acidity, ,sweetness, and exceptional clarity, showcasing Ethiopia’s continued experimentation with advanced processing techniques. I’m super impressed with this new method!
