Inspired by the strong, fragrant and fermented cups of wine, the Winey processing method involves allowing coffee cherries to over-ripen on the trees before harvesting. During the drying phase, a Winey processed coffee is left to dry for a longer period of time until the cherries nearly resemble raisins in appearance. A normal coffee may dry in around 2 days, this coffee will dry for about 15-18 days on raised African drying beds. Having over-ripe cherries and a slower drying phase increases the intensity of flavour present and will add some stewed, heavier notes to it also.
