About:
Danche is an Ethiopian coffee produced in the highlands of Yirgacheffe, where smallholder farmers cultivate coffee at high elevations ideal for slow cherry maturation. This lot is processed using the red honey method, where the cherry is removed, but a significant portion of mucilage is intentionally retained during drying. The coffee is dried slowly on raised beds, allowing sugars in the mucilage to caramelize and enhance sweetness while maintaining clarity. This process results in a structured and aromatic cup, typically expressing notes of stone fruit, florals, and high sweetness, supported by bright acidity
