The production at this farm starts with highly fertile volcanic soil 1400 meters above sea level. The farm is managed by Alejo Khale Castro, who is a sixth generation coffee producer. He says his strive for excellence is due to his upbringing with his father, since he was young, they spent most of their days on the farm, watching the mills and experimenting with processing methods. He says coffee runs in his veins. This coffee is fermented in anaerobic tanks with a one way valve that lets oxygen out and then is replaced with CO2.
