About:
Natural Guamo is produced in the El Guamo farm, under controlled natural processing protocols. Coffee cherries are harvested at peak ripeness and carefully sorted before undergoing a 36 hour pre-fermentation inside the intact fruit, in grain-pro bags. This oxygen free environment enhances the development of fruity and tropical flavour notes. Drying is managed slowly on raised beds or patios, allowing moisture to reduce gradually while preserving clarity and sweetness.
