This coffee was produced by Brayan Alvear, and yes, this is the actual name that they have called this coffee. At first I thought it sounded a little silly, but once I tried how intense, weird and unusual this coffee was, I am now totally on board! This Caturra and Colombia varietal blend starts with a 48 hour anaerobic pre-fermentation of the coffee cherries. They are then pulped and further fermented, where ground cherries and sugarcane is added to the process. Fermenting with real fruits is usually referred to as an infusion process and will add artificial flavours that shouldn’t be expected in coffees without this same processing.
