About:

The Yellow Bourbon varietal originates in San Paulo, Brazil in 1930. It is a natural mutation of the Red Bourbon varietal. When ripe, it is a bright yellow colour instead of the traditional red colour you see in most coffee varietals. It was extremely popular  around 1950 as the varietal has a higher yield than  most cherries, but at the cost of quality. In 2005,  as the demand for specialty coffee increased, many studies were held on the Yellow Bourbon  and other high yielding varietals in hopes to  increase the quality while maintaining yield. Since  then it has been extremely popular in the  specialty market and even won Brazils Cup of Excellence in 2015, and selling for nearly $300/kg.
