This pink bourbon is one of their flagship lots produced at El Vergel Estate and is their most intense and fruity coffee. They planted over 40,000 trees of this varietal in 2016 and 2018 and it has been the coffee they use for most of their experimentations with processing including the new famous Koji fermentation coffee. These beans have undergone a 48-60 hour anaerobic fermentation, which enhances its innate flavour profile. It is then sun dried on raised beds until it reaches 30% moisture then moved to mechanical drying machines that circulate the coffee at 45oc until 16-18% moisture where they are left to stabilise in grain pro bags before being shipped to me!
