This might be the most intense coffee I’ve ever purchased. But I’m still very happy that I had the pleasure of trying this wild microlot! It is fermented in an open environment for 72hours, then rinsed. Both peppermint and yeast is added to the coffee to ferment with it for another 96 hours! It is then sun dried for 21 days until the correct moisture levels are reached. It’s important to remember that this coffee is fermented with products that aren’t naturally occuring within coffee. Some see this infusion process as cheating or unethical but I think it’s fine as long as the correct information is displayed regarding its processing method.
