The Pink Bourbon coffee varietal is still something of a mystery in the coffee world, both genetically and in how it presents in the cup. Often associated with Ethiopian landrace varieties, it’s known for producing particularly aromatic and high-scoring coffees. Its name comes from the distinctive pink hue of the ripe cherries, as seen on the other side of this card, and it tends to offer a more perfumed and intricate profile compared to other Bourbon types. When grown and processed with care, it can deliver exceptional clarity, structure, and a vivid expression of fruit and florals. On the other hand however, when the varietal isn’t properly cared for, I find Pink bourbon can taste very peppery and rubbery, and usually stands out as a very bad cup. High risk, high reward!
