Welcome to another Almanac Special Tin Relase coffee! This time a really interested, heavily fermented coffee by the Santuario Project in Colombia! The Black Lime process actually doens't involve any limes or fruits at all! It takes the cherry through two different fermentations, firstly a carbonic maceration process with Mossto, which is the fermentation byproduct of a previous coffee fermentation, giving it an array of bacteria and life to ferment from. This fermentation lasts for 85 hours before a secondary Carbonic maceration process for 45 hours, again with Mossto!
This fermentation intense process gives the coffee such a unique, herby and citrus flavour notes that I'm really enjoying!
