The Pink Bourbon varietal is a natural mutation of both Red and Yellow Bourbon varietals and has been appearing more often especially in Colombia. The altitude and volcanic soils of the area are a perfect match for the varietal to shine. This coffee lot has undergone a 24 hour pre-fermentation in the cherry, followed by a 36 hour anaerobic washed fermentation before being dried on raised beds over 15 days. The semi-washed process results in a complex profile that still maintains its flavour balance.
