The journey of this coffee begins with meticulous selection of Pink Bourbon coffee cherries. Each is hand picked before a 36 hour pre-fermentation phase in GrainPro bags. This controlled environment enhances the coffee’s complexity, creating the foundation for it’s full profile. It then undergoes a 120 hour fermentation in hermetic tanks under shade. The humidity during this process is controlled between 22-25%, this allows the beans to develop the more signature flavours that you would expect from a large fermentation process.
