Back in 1995, Elias and Shady Bayter were one of the countries most productive avocado producers at their farm ‘El Vergel’. But in 2006, avocado prices dropped due to a disease that severely affected the crop. The Bayter family decided transitioning to a coffee farm was their best bet. They planted uncommon varietals for the time, including Catimore and Red and Yellow Caturra, despite not knowing much about them. They embarked on a journey to get the best out of their crops which lead them to experimenting with processing in 2018 where they started playing with fermentations and have achieved great results such as this coffee!
